Martha Clara Vineyards Sauvignon Blanc North Fork 2008
The grapes were handpicked on two separate days and gently pressed. Only the Free-run juice was used for this wine. The juice was allowed to clarify and then the slow cool fermentation began using a blend of yeasts specifically developed for Sauvignon Blanc. Each fermentation lasted approximately 3 weeks. The wine was fermented in 100% Stainless Steel. The wine was painstakingly kept away from oxygen to keep as much of the varietal character present.
