Rich, with a strong smoky note, almost acrid, over the currant and blueberry flavors, finishing with fine-grained tannins as the fruit lingers impressively against the smokiness. Best from 2007 through 2012.

Saturated full ruby, the color of syrah. Aromas of cassis, black licorice and tarry oak. Dense, concentrated and penetrating, with juicy, syrah-like flavors of cassis, black raspberry, pepper and meat. This offers lovely sweetness and concentration. Sweet and supple but not at all cloying. Shows good firm structure on the back end.

The more expensive offerings include the 2004 S2 Cabernet Sauvignon. The first bottle tasted was closed, but a second bottle was more open and interesting. There is more to it than the less expensive cuvees, but also more tannin and wood, which can make for a less charming and less open-knit wine. It appears everything will come together with another 6-12 months of bottle age, but at present, this is a solidly made, outstanding example of Cabernet Sauvignon in need of bottle age. It should last for 7-8 years.

Ruby-red color. Fresh, high-pitched aromas of redcurrant, cassis and blackberry, with complicating notes of fresh tobacco and exotic chocolate. Fat and velvety, with a sweet blackberry liqueur flavor supported by silky tannins. Finishes round and gentle, with lovely clarity of dark berry fruit and impressive length.

The 2002 Cabernet Sauvignon S2, from relatively young vines (1,500 cases produced; 100% Cabernet Sauvignon), exhibits elegance as well as structure, charactertistics of this vintage in South Australia. Notes of cedar, spice box, licorice, red currants, sweet black fruits, and toasty oak are found in this plump, rich, graceful, well-delineated Cabernet. Aged in a combination of both new and old French and American oak for 13 months, it should drink well for 5-8 years.

Broad and ripe, not heavy, this feels almost like a big, floating ship, emanating ripe cherry, blackberry, toasty oak and hints of smoke and licorice as the finish sails on and on. Tannins are well-resolved. Drink now through 2014.

The upscale, more expensive as well as more prestigious Marquis Phillips' offerings include the 2003 Cabernet Sauvignon S2. It boasts a deep purple color as well as a classic bouquet of crème de cassis, lead pencil shavings, and licorice aromas. Heady, dense and medium to full-bodied, with plenty of ripe tannin, it is an intense, powerful 2003. This big Cabernet is best consumed during its first decade of life.
