*David Williams's wines of the week - The Guardian, 2nd April 2016* Marjan Simčič represents the fifth generation of winemakers in the small village of Ceglo in the region of Goriška Brda. Half of his vineyards are situated in Italy, the other half in Slovenia where the nearby Trnovo forest helps to shield the vines against any cold weather. The Simcic philosophy revolves around the latin phrase “in vino veritas” - there is truth in wine. They believe their wine tells the story of the region and heritage. It is based on natural viticulture, coupling modern and traditional vinification techniques. The wines are bottled without cleaning or filtration and no chemical fertilisers or pesticides are used in the vineyards. Ribolla is a Slovene autochthonous variety growing only in Goriška Brda region. It grows best on Brda marl soil (opoka) under the influence of the mild Mediterranean climate. In the past, it was a simple wine as the vine could be very loaded. The Ribolla, from middle-aged vines, is light yellow, with gold accents; the bouquet is specifically soft (notes of lemon, green apple, citrus and grapefruit) and fruity. The harmony of acids, the full body and distinct minerality complete the taste to its excellence. Enjoy as an aperitif or with lettuce, vegetables, asparagus, white meat, sea food.
