Margerum Rosé Blend Santa Ynez Valley Rosé Margerum Ranch 2008
We make this wine in a very unique way. We saignée (bleed) off a little bit of juice from each of the Grenache vineyards we work with and ferment the slightly pink must just like we do the rest of the whites in the cold room and in stainless steel. We then blend back about 30% of the improved RED Grenache (the ratio of skins to juice results in a more deeply flavored wine) from barrel into the rose wine to give tannin, complexity, and seriousness. We want a wine that could (and should) match with cuisine – try it with Bouillabaisse! This is serious rose.
We are a small producer of Syrah, a Rhone style blend called M5, Sauvignon Blanc, Pinot Gris, and a few other varietals. Our grapes are purchased from the finest growers in Santa Barbara County. In addition, we are beginning to import a few exceptional wines we have found in our travels to the wine regions of Italy and France.
RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
