The name, meaning “wild boar” is also the name of the 20-acre vineyard where the Pinot Noir and Chardonnay grapes for her wines are grown. Two-thirds of the winery’s production is Pinot Noir. Production is limited to 2,500 to 3,000 cases a year, with the majority of the bottles sold only to exclusive mailing list members (there is an extensive wait list to receive them). The wines typically start at around $125 a bottle to the mailing list and sell for many more times that at auction. RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
