- Pierre-Yves Colin (see below for reviews of a small négociant operation that he has begun, called Colin-Morey) has been involved with the winemaking here since 1994. He told me that 2001 was an easy vintage in white as it was very ripe with almost no rot and we didn't have to chaptalize at all in Chassagne. He elected to employ a technique that is quietly being adopted by a number of cutting edge domaines, which is to not destem the chardonnay fruit. Colin said that the musts were so clean that there was no pre-fermentation débourbage and while the juice was not fragile, he said that he elected read more...to bâtonner only two times during the entire élevage period, which is unusual. Coin underscored the point by adding that I prefer to press light and not do a débourbage rather than do what most domaines do, which is to press hard and then allow 24 to 48 hours of settling time. He noted that the crop was so ripe that we were afraid of unbalancing the wines by making them too rich so we refrained from stirring the lees too much. The wines saw between 20 and 50% new oak, were fined via casein and lightly filtered by Kieselguhr and then bottled in September. Note: the négociant wines appear under the Marc Colin et Ses Fils label whereas the Domaine wines are sold as Marc Colin et Fils. (Robert Chadderdon, New York, NY). Note: from 80+ year old vines Bigger, denser and sappier with lovely aromatic complexity that offers a hint of citrus, complementing round, nicely intense flavors of good sap and concentration.
