Henri Boillot told me that 2002 is a great millésime with exceptionally good maturity if one was willing to wait. I told my growers that I would not accept fruit that was harvested at the ban de vendange (officially declared harvest date). As such, everything came in with sugar levels between 13.5 and 14% but, and this is the wonderful thing about 2002, we still had excellent acidity.
