Winemaking - Once the fruit from this exceptional vineyard was picked, we allowed a very warm fermentation to extract as much flavor and tannin as possible. This technique unites the flavors and textures of the wine at the height of fermentation. Merlot and Cabernet Franc were blended to soften the tannins derived from this hillside vineyard. After 2 years in 90% new French oak barrels, the wine was bottled, unfined and unfiltered. Tasting Notes - This Reserve Cabernet Sauvignon has an amazingly dark, rich, opulent nose. Excellent structure, depth and richness are deftly balanced with a plush read more...core of currant, spice, black cherry and blackberry. There is a burst of concentrated flavors on the finish, and ripe, fine-grained tannins. This Reserve Cabernet Sauvignon shows amazing intensity at a young age, but enough tannin and structure to keep the wine evolving for the next twenty years.

- This is really fantastic - get your hands on some while you can. I don't even know how to describe it other than the best cab I've ever had. To be fair I don't drink a ton of cab but that's because usually it's too young and brash. This is smooth and sophisticated and flavorful but light bodied. You could serve this with any meat and it'd come up a winner...except honey ham maybe :)
