Winemaking - We allowed a very warm fermentation to extract the maximum of flavor and tannins out of this amazing vineyard. This technique unites the flavors and textures of the wine at the height of fermentation. Merlot and Cabernet Franc were blended to soften the tannins derived from this mountain fruit. After almost 2 years in 80% new French Oak barrels, the wine was bottled, unfined and unfiltered. Tasting Notes - The nose on the 2004 Napa Valley Cabernet Sauvignon is filled with aromas of milk chocolate, cassis and black cherry. The entry is intense, with a tannic, broad structure. Black read more...fig pushes to the forefront and shows an excellent range of depth and concentration. The mid-palate is also plush with currant, anise, earth and cedar flavors. The finish is a memorable burst of plum, berry, cedar and tobacco. Our Cabernet Sauvignon was exceptional in 2004, and we can expect it to continue improving over the next decade.
