TASTING NOTES A wine characterized by its great structure, sweetness and aromas of spices, ripe plums, coffee, cherry and violets. After 18 months in French oak barrels and another 14 months in bottle, it achieves vanilla scents. Velvety finish. TECHNICAL SHEET Climate Long autumns, cold winters and dry summers, all of which provide the ideal conditions for obtaining optimum ripeness and great body. Average temperature in summer: 23 ºC (73.4 ºF). Minimum temperature in winter: -4 ºC (24.8 ºF). Average annual rainfall: 197 mm (7.76 in). Soil Sandy-limestone, loamy permeable soil of alluvial origin supported by gravel and pebble. 1% E-W inclination. Oak Ageing 18 months in French oak barrels. Yield of Vineyard 50 qq/ 35 hl (2.59 tn/ac). Grape Variety Malbec and Petit Verdot Ageing Potential 15 years. Filtering Lightly filtered and clarifyed using egg whites. Service Temperature 16°C – 18°C (60.8 ºF – 64.4 ºF). Basic Analisis Alcohol 14.6° pH 3.5 Total Acidity 5,60g/l Residual Sugar 2.14 g/l Pairing Game Meats – Pork and Lamb – Hard Cheeses.
