Louis Michel & Fils Chablis Premier Cru Montmain 2007

Winemaker's Notes:

The Michel family have been cultivating their passion for tradition and the Chablis terroir since 1850. The winery is situated right in the heart of the village, with the 25-hectare vineyard spread over the very first slopes that were discovered by Cistercian monks in the 11th century. 40 years ago, the family decided to stop making the wine in wooden barrels, preferring to create clean, pure and precise Chablis without adding artificial woody tastes. Through this philosophy, combined with the limited yields inspired by organic wine-growing techniques, the Domaine has developed a worldwide reputation for fine wine-making in stainless steel tanks. Today, the Domaine is managed by Jean-Loup Michel and his nephew, Guillaume Gicqueau-Michel, who is continuing the family tradition. Montmain vines were gradually replanted between 1983 and 1989. These 4 vineyards are spread along a clay hillside known to be sensitive to spring frosts. When the frost season arrives, we pay particular attention to this vineyard. This 'Chablis 1er Cru Montmain' displays a bright white gold colour with a pronounced, vibrant nose showing citrus and floral aromas with hints of brioche. The palate is full of mineral flavours alongside zippy citrus and green apple characteristics. The finish is elegant and very fine. Perfect with a wide variety of canape, lobster bisque or pan fried scallop.
