For as broad a range of burgundies as Jadot produces, many people do not know that they also market a small range of Chablis as well. The approach for these wines is largely the same as for their other whites, which is to say very little intervention, limited amounts of oak and long élevage. All of the wines come from a single source though it may not be the same source for every wine. The wines are bought in various stages, from must to finished wine but most often it is purchased just after the malos are completed. In most vintages I prefer the elegance and finesse of the Demoiselles to the power of the Montrachet but in 96, the additional weight of the Monty is carried effortlessly on the ripe but serious acid substructure. Rich, concentrated and detailed with such incredible power that the finish literally lasts for minutes on end. This is a wine that forces one to drink it slowly as it is so intense that the palate demands time to recover. A great Montrachet worthy of the name that should last several decades.
