A Superb white Burgundy from a world renowned producer, Maison Louis Jadot selects only the finest Chardonnay grapes for this Chassagne- Montrachet. Harvest is done by hand and vinification takes place in oak casks. Only wild yeasts are ever used in the fermentation and the wine ages for 18 months in oak barrels before release. Acoording to Steve Tanzer, founder of The International Wine Cellar, who calls it "Fat and lush in the mouth but not at all overly sweet, thanks to sound, slightly spiky acidity.", this wine contains just over 50% juice from Premier Cru vineyards particularly Les Vergers and Les Chevenottes. Rich, robust, aromatic and persistent. Maison Louis Jadot was founded in 1859 by Louis Henry Denis Jadot. He quickly developed a reputation as a high quality producer and his aim was to build his reputation as a top quality winemaker in Burgundy. To achieve this aim he continued to purchase vineyards to add to the family's earlier purchase of Beaune Clos des Ursules and Chevalier Montrachet Les Demoiselles vineyards. His Grandson, who took over at the end of WWII continued to build Louis Jadot's Domaine holdings by acquiring Grand Cru vineyards in Corton Pougets and Corton Charlemagne. Chassagne Montrachet, situated in the south of the Côte de Beaune, is one of the 5 villages of the prestigious "Côte des Blancs". The white wines of Chassagne Montrachet are the most robust of the Côte des Blancs, becoming less delicate and more straight forward as one progresses southward from the Grand Cru vineyards at the Puligny border. This traditional vinification in oak casks brings forth the rich, plump fruit and full body of this Louis Jadot Chassagne Montrachet, which shows a vigorous, aromatic bouquet and persistent, earthy finish. This great wine should be kept for special occasions, with dishes such as foie gras, entrées and fish in cream sauces, fine charcuterie and white meats in rich sauces. The Chassagne Montrachet also enjoys a great ageing potential and can be kept in good cellaring conditions for 8 to 12 years.
