- Knock out aromas of spice, earth and black pinot fruit introduce intense flavors displaying superb size, power, richness and density plus outstanding length are all buffered by impressive levels of sap and despite the sheer size, this remains exceptionally well balanced and it should evolve into something really lovely. This is mouth coating and still youthfully exuberant and tannic and will require patience.

- For as broad a range of burgundies as Jadot produces, many people do not know that they also market a small range of Chablis as well. The approach for these wines is largely the same as for their other whites, which is to say very little intervention, limited amounts of oak and long élevage. All of the wines come from a single source though it may not be the same source for every wine. The wines are bought in various stages, from must to finished wine but most often it is purchased just after the malos are completed. Jacques Lardière told me that he's looking for volume in the mouth. This is Chablis read more...of course so I want to preserve the minerality but I don't care for thin, acidic wines and thus I want some fat to buffer the minerality. That said, I would rather preserve some malic acid if it adds to the mouth feel and structure though every vintage is different. And I don't believe the élevage should be any different from our Côte d'Or whites. About the only difference is that our Chablis villages is 100% stainless and we use almost no new oak and then only for the grands crus. Lardière says Jadot doesn't buy very much as they're really looking for quality and in fact, the average volume is 1000 hl, or about 11,000 cases annually. The mix of wines offered is limited and in a typical vintage, Jadot buys only a Chablis villages, Montmains, Vaillons, Fourchaume, Côte de Léchet, Preuses and Grenouilles and for a period of time, there was a Valmur. On this visit, Lardière surprised me with a mini vertical of various wines and vintages and I present all of them here. Note that a few wines were opened from 375 ml bottles. - This is one of the rare instances where the 750 ml version was both fresher and better and I was quite surprised to note that there were already the initial hints of secondary aromas on the nose and while the intense, solidly tannic flavors offer mouth coating richness and a lovely finishing complexity, they lack the same nuance. This finishes with good power and solid muscle plus a touch of warmth. It would be reasonable to assume that this was simply an atypical showing for this in magnum as I've had the wine from fifth at least a dozen times with consistent results.
