I bought this bottle of wine from Louis de Grenelle's place in Saumur on my trip back in May.The wine is made and stored in some of the caves and tunnels in the limestone beneath the town some of which were dug out by prisoners during the 17th and 18th century.Much of the excavated material was used in buildings in the town.My bottle is made by the ' methode traditionnelle ' [ie the same method as Champagne ] from the cabernet franc grape and spent 12 months in oak barrels. I served it with a lunch of mushroom and cheese quiche and salad and I did enjoy it. It is a very dry wine. .It is very sparkling ie there are a lot of small bubbles and there is a sour raspberry or cherry style fruit. It went well with the quiche
