- François Carillon professed himself to be quite pleased with the Domaine's 99 whites, commenting that they have excellent balance and solid if not exceptional acidity relative to the gras or fat most of his wines already display. He particularly likes the vintage's finesse and elegance, and this is saying something for a Domaine that routinely issues some of the most elegant whites in all of Burgundy. He believes they will drink well young because there is plenty of fat but should age well too. When I asked why, given the relatively forward nature of the vintage, François said that read more...even though the acidity was not particularly high, the average pH chez Carillon was somewhat lower than usual, which essentially means that the impact of the acidity is greater. The Carillon 99s were in holding tanks when I visited in February and François said that they would bottle in mid March. The style of these 99s is consistent with the Carillon style (though they are somewhat more forward than usual), which is to say gorgeously pure and elegant and if you have enjoyed the Carillon wines in the past, there's every reason to believe you'll enjoy these as well. François also mentioned that he believes his 98s are somewhat deceptive in that the solid acidity is almost completely hidden by the low yields and that they actually have higher acidity than the 99s. However, despite this slightly higher acidity, the 98s presently drink as though they have less of it. Thus, François suggested that despite the seemingly forward and soft nature of the 98s, they will actually require more time than the 99s to show their true potential. While this may ultimately prove to be true, I am inclined to drink the Carillon 98s that I personally own sooner than later because if the acidity softens at all, they risk becoming somewhat top heavy. Domaine Carillon continued: Superbly pure fruit and healthy acidity beautifully frame this wine with its racy, almost zesty flavors and fine overall balance. The Referts offers more focus and flavor precision than any of the prior wines and I really like the subtlety, especially on the long finish. Intense, complex and classy. This displays grand cru quality. The best of these 99 1ers and highly recommended. (hide)
