The majority of Liberty School Chardonnay comes from two growers in the cool-climate Santa Lucia Highlands. Some of the most acclaimed Chardonnays in California come from that area, and Liberty School’s grapes get, as they should, first-class treatment all the way. All of the grapes are picked in small enough lots that they can make the 2-hour trip down to the winery and be processed immediately. The fruit is whole-cluster pressed at low pressure in custom-built equipment. Two-thirds of the juice is barrel fermented and one-third ferments in temperature controlled tanks starting at a cool 35°. The wine is aged in a mix of half and half, French and American oak barrels for 9 months. The flavors are vibrant and ripe with tropical fruit touches of pineapple, mango and coconut. A tremendous value.
