Food Pairings for Les Domaines Paul Mas Coteaux du Languedoc Château Paul Mas Clos des Mûres
Dark ruby color with violet shine. This Clos des Mûres has a complex nose with blackcurrent aroma, of violets and blackberries, with a subtle note of cocoa and spices. Embellish with a beautiful acidity that gives equilibrium to fleshy tannins. A full bodied red, firm and generous, silky, with long and inspiring flavors, leaving traces of pepper which adds notes of leather, prune and thyme as well as light notes of wood - liquorice - torrefaction. Red meats will simply not believe it. Of course that a few years in a cellar would permit to mellow a little more, but otherwise, a few minutes in a carafe would do it the greater good. Tasted on July 7th 2011.
