Winemaker's Notes:

The 2011 vintage was warm and dry providing perfect conditions for the early-ripening varieties of Semillon and Sauvignon Blanc. As with previous releases, the majority was fermented in stainless steel tanks to retain freshness and vitality and at cool temperatures facilitating a gradual conversion of sugar into alcohol by selected yeasts. 8% was barrel fermented in new French oak. This years blend is 50% Semillon 50% Sauvignon Blanc. The Sauvignon Blanc contributes aromatic elements with the Semillon providing the weight and depth of flavour on the palate. We encourage consumption within the first 2 years of vintage, though under appropriate cellaring conditions, the wine will soften and develop the honeyed, toasty characters of bottle age.
