Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Complex aromas of black licorice, tobacco and cedar with red fruits. Full-bodied, with superseductive, silky tannins, loads of fruit and a finish that lasts for minutes. A beauty in all the sense of the word. Best after 2012.

At present I would rate the 1995 La Mission slightly ahead of the 1996 only because the 1995 possesses a forward sweet complex more evolved nose. It find it impossible to resist the 1995 s density and richness. Nevertheless the 1996 is an outstanding wine. The color is a dark ruby/purple and the nose offers up roasted herbs sweet blueberry jam and cassis scents intermingled with earth and truffle-like aromas. Round rich and sweet with medium to full body outstanding depth but not the weight glycerin and overall opulence of the 1995 the 1996 should hit its peak in 7-8 years and last for 25. The essence of Graves, with great concentration but no rough edges. The fruit and tannins are rich yet fully integrated, and the tobacco and cedar notes are classic for this estate. Best after 2000.

Full ruby-red. Initially mute nose opened slowly to reveal complex aromas of raspberry plum hot stones tobacco saddle leather and toffee. Really explodes on the palate; lush and minerally with a compelling note of woodsmoke and firm acidity. Wonderful combination of sweetness and vibrancy. Finishes very long and subtle with firm tannins. 92 points Stephen Tanzers IWC.

The backward 1996 Haut-Brion was bottled in July, 1998. The 1996 exhibits a deep ruby/purple color, and a surprisingly tight bouquet. With aeration, notes of fresh tobacco, dried herbs, smoke, asphalt, and black fruits emergehellip; but reluctantly. It is tannic and medium-bodied, with outstanding purity and a layered, multidimensional style. However, the finish contains abundant tannin, suggesting that this wine needs 5ndash;8 years of cellaring. Anticipated maturity: 2008ndash;2030.
