Lawson's Dry Hills Pinot Noir Pino Rosé 2003

Winemaker's Notes:

Grown in the Collett vineyard at the mouth of the Brancott Valley and the Evill / Lawson vineyard in the coastal Chaytors Road sub region. Vines were shoot thinned, leaf plucked and then bunch thinned throughout the growing season. Both components were picked early to retain natural freshness and acidity. The Pinot Noir juice was given just enough skin contact, overnight, to give it a delicate salmon pink hue. The juice was then treated like an aromatic white wine and slowly cool fermented in stainless steel.
