What to Expect

Champagne is specifically a sparkling wine made in the Champagne region of France; every other sparkling is simply that, sparkling wine. Made to be aged for a few to many years, in many languages "Champagne" is synonymous with "party". When young, Champagne exhibits the fresh fruit tones of its "cepage", or blend. Usually based on a blend the features either Chardonnay or Pinot Noir as its main ingredient, Champagne's fruit can range from citrusy to orchard fruits and even red berries. The wine gains distinct yeasty notes from its secondary fermentation, the one that adds the fizz, which is typically described as recalling brioche or bread. As it ages Champagne tends to lose its obvious fruit, which is replaced by subtle nutty tones and subdued elements of dried fruits.

After a little aging, these will evolve to even deeper aromas of honey and pine resin. The richness of the Demi-Sec naturally calls for sweet dessert dishes, such as pastries or chocolate, enhancing them with considerable depth.

This lightly-sweet Champagne was identical to their Brut NV version until the dosage was added to the wine. This is made from equal parts Chardonnay and Pinot Noir with 20% Pinot Meunier. Just gently sweet and perfect for two in this half bottle.

Laurent-Perrier has been producing a Demi-Sec since the 19th century, when it was known as Laurent-Perrier Excellent. Today it is heralded by connoisseurs for its diverse food pairing opportunities. The general movement towards dryer wines along with the custom of drinking Champagne as an aperitif, has generalized the consumption of brut.
