Soil: The soils mix gravel and dark clay.<br/><br/>Date of Harvest: The Merlot was harvested on Oct. 5th and the Cabernet on Oct. 10th.<br/><br/>Vinification Method: After a 6-day cold soak @ 6° C, the juice was fermented in small, 32-hl, stainless steel tanks, with a 28-day cuvaison.
