Château Fontaine de l'Aubier is a family property in the Bas-Médoc, just north of Saint-Estèphe and Pauillac. Its fifteen hectares of vines are grown half on gravelly soil (better for Cabernet) and half on chalky clay (the preferred soil of Merlot). The family use environmentally-friendly methods. In particular, they prefer to grass-over in the vineyard, so the vines have to work harder to access water, while the vegetation helps to keep in the nutrients. Owner Rémy Fauchey likes to make big, concentrated wines by picking the grapes as late as possible and giving the fruit a long maceration (about thirty days) to extract maximum color and flavor. This magnificent 2005 is made from equal parts of Merlot and Cabernet Sauvignon, carefully vinified, then aged in premium oak casks for 12 months before bottling.
