The wines were fermented in small wood bins, hand punched during fermentation and pressed with a small basket press. The wines were aged separately. Towards the end of cellar aging, the wines were blended to create a unique wine consisting of 32% Dolcetto, 34% Nebbiolo and 34% Refosco. Nearly two additional years of bottle age has created a uniquely complex wine of elegance and structure.
