La Rochelle Pinot Noir Paraiso Vineyard Santa Lucia Highlands 2005

Winemaker's Notes:

Tasting Notes: This offering emphatically celebrates its SLH-ness: bright, dark fruit aromas of raspberry and pomegranate, cola notes and orange zest. Structurally, the mid-palate is rich and substantial while the wine finishes with good acidity and great length. Winemaking Notes: 365 cases of this Pinot Noir were produced; it is 43.7% Garys' Vineyard, 37.5% Sleepy Hollow Vineyard, and 18.8% Paraiso Vineyard. After destemming and crushing the fruit was fermented in one 1 ½ ton open-top bin. After a cold-soaking period lasting four days, the must was inoculated with a variety of yeasts including Montrachet, RC212, RB2, D254, and L2056. The wine went through extended maceration, post-alcohol fermentation for eight days. Malo-lactic fermentation was induced in barrel. Vineyard Notes: Because SLH runs from the Northwest to Southeast, the vineyards in the northern end are closer to the water and cooler than those in the south. The three vineyards we have used for the 2005 Pinot Noir, Santa Lucia Highlands run the length of the appellation: Sleepy Hollow in the north, Garys' Vineyard in the center, and Paraiso Vineyard in the south. Technical Notes: Appellation: Santa Lucia Highlands Harvested: September 29 – October 10, 2005 Alcohol: 15% Aging: 16 months in barrel. 70% new French oak, 7% new American oak, and 23% second-use French oak barrels were used.
