Produced since 1994, Neige apple ice wine is produced through natural cryoconcentration. Offering the perfect balance of sugar and acidity, Neige is characterized by a rich amber color and a distinctive fresh apple flavor with a vanilla finish. Although ready for immediate consumption, Neige can be aged and savored for several years. Served cold (6°C), it is a perfect aperitif or accompaniment to cheeses with a slightly nutty flavor. Sugar at harvest: 380 g/l Residual sugar: 165 g/l 12% alc./vol.

La Face Cachée de la Pomme was born from François Pouliot’s inventiveness. This 29-year-old video and movie producer cherished a dream: to produce the finest of Québec’s terroir… in a bottle! In 1994, he acquired an orchard in Hemmingford, Montérégie. Inspired by the harsh winters and apple trees that surrounded him, he contributed to the development of the very first ice ciders — a true novelty at the time. In 1998, artist Stéphanie Beaudoin fell for the man’s charm… and Neige! Making a statement, the cidery became a reflection of its contemporary roots, modeled after the image of its young founders and this fabulous new “know-how” in Québec, the ice cider. In 2007, the Fundacion de la sidra in Spain recognized them for their contribution to the development of ice cider and for introducing it to the market in Québec and the rest of the world. The family estate has received over 60 international awards. Aged in oak casks this apple ice wine has beautiful notes of vanilla. Didn’t seem vastly different from the Neige, which is $5 cheaper though.

appearance: clear bright of medium intensity golden color with luscious legs at the bowl nose: clean with medium (+) intensity, developping. aromas of apple skins, orange blossom, honey, with medicinal characteristics reminding one of a spirit rather than a sweet wine palate: sweet with medium acidity and medium alcohol level. a medium (-) body with medium (+) intensity of orange blossom, honey, apricot, ripe apple, pinapples. a complex, fresh, and luscious palate with a long finish and watery freshness that calls for another sip. conclusion: good: a fine balance between acidity, flavours, and alcohol level. a very refreshing wine which shows smoothness and complexity of flavours. a very surprising discovery considering that it is made from frozen apples and not from grapes. definitely to look for.
