Kunde Estate Cabernet-Syrah Blend Sonoma County Dunfillan Cuvee 2005

Winemaker's Notes:

Harvest/Winemaking * The Dunfillan Cuvee is comprised of a blend of 63% Syrah and 37% Cabernet Sauvignon. * The fruit was harvested from October 5 through 24 at an average Brix of 26.3°. * The Syrah and Cabernet lots were fermented and aged separately. Fermentation was conducted in stainless steel tanks at 75 - 88°F. for 12 days. * Pumpovers occurred twice per day with aeration early in fermentation. * The wine was aged for 16 months in French Hungarian and American oak barrels. * The wine was bottled in June 2007. Aroma/Flavor Profile Raspberry and cedar with a lovely chocolate essence Winemaker's Comments "Remember those old commercials where a peanut butter lover and a chocolate lover accidentally mixed their favorite snacks and found out they loved the combination? Okay we're dating ourselves and not appealing to the Millenial demographic but that's what the 2005 Kunde Estate Dunfillan Cuvee is all about: two great wines on their own combine to make something else unique and different. The result is all the wonderful raspberry fruit of the Syrah underlain by a touch of bay leaf and rich chocolate from the Cabernet Sauvignon framed by some toasty oak and dusty tannins.
