2007 started with a cold and dry spring that gave way to a mild summer with a warm spell in late August. The fall weather was mild, slowly ripening the grapes until they were picked in late September and October. After being harvested, they were crushed and fermented in stainless steel tanks for 12 to 17 days. The wine was then aged in French oak barrels for 22 months. After aging, the wines were tasted, selected and blended before being bottled in June of 2009.
