Keller Estate Methode Champenoise Brut 2003

This smells a touch cheesy and decidedly waxy. There’s a huge chamomile note over fennel cookies, with a touch of oyster and light notes of acacia honey. On the palate, this is soft and caressing, with a nice vegetal tone early on that leads to gentle flavors of peach, lime and a touch of fresh brie. Complex and well made, though lacking a touch of intensity in the mouth. 87pts
