Winemakers Notes

Vinification:
Cold maceration in a temperature of 15ο C for 7 days. Fermentation for 2-3 weeks in a temperature of 30-32ο C. The malolactic fermentation takes place in oak barrels and the wine stays within its yeasts for 2 months (under regular battonage process) and it matures for more than 10-12 months in the barrels.

Total Acidity: 5,3 gr/lt

pH: 3,6

Residual Sugar: <1 gr/lt

I really enjoyed this wine. Very complex flavor with a long-lasting fruity finish. Medium bodied with soft tannins. Nose had hints of both black and red berries. Taste had red berries with a distinct hint of black liquorish.
