This Cava is produced only from Pinot Noir grapes grown in the Freixa 1 vineyard at our Espiells estate. After a proper maceration, we extract the free-run rosé juice, and a natural process of decantation is made before we start the fermentation at a controlled temperature of 18ºC. Once the wine is free of sediments and stabilized, we have the basis for the Brut Rosé Cava. The wine is bottled, and following the méthode champenoise, the Cava undergoes a second fermentation and is aged on its lees for almost 18 months before the wine is ready for release.
As is typical of Rosado Cava, this is at once dry and fruity with dried raspberries and strawberries, red currants, and dusty stones describing the nose. The mouth is more fruited with red cherries and currants, strawberries, raspberries, and a hint of banana peel. The dusty, stony note continues too, and it seems uniquely Spanish in this conflation of fruit and earth.
