Crimson with a touch of purple in colour, the wine shows lifted blackcurrant, red cherry and mulberry fruit characters with a touch of mint, spice and smoky vanillin oak on the nose. The palate has good flesh and richness with juicy berry fruit and spice with a fine tannin backbone. WINEMAKER’S NOTES The warm weather during the 2003 vintage allowed full ripening in the cabernet sauvignon and merlot grapes, which shows in the resulting berry fruit characters in the wine. The Juniper Crossing Cabernet Sauvignon Merlot is made in a style for immediate drinking pleasure, but has at least 5 years cellaring potential. VITICULTURE & VINIFICATION Grapes for the Juniper Crossing Cabernet Sauvignon Merlot were sourced from contract growers in the Margaret River region and 30% from the old vines on the Estate. The grapes were picked in late March and early April. The grapes were de-stemmed prior to being pumped to the fermentation tanks where the must was inoculated with yeast and fermentation began. The wine was pumped over twice a day for extraction of colour and tannin. The batches were blended after malolactic fermentation with a resulting blend of 80% cabernet and 20% merlot. The blend was matured for a minimum of 12 months in a mix of French and European oak of which 20% was new. Bottled October 2004. 14.0 % alc. pH 3.48 TA 6.6 g/L
