Along with that great extraction of color you will notice aromas of plums and cocoa. The mid-palate flavors comprise sensual, round yet elegantly balanced tannins combined with hints of bittersweet chocolate, orange and tea.
Wine Tasting NotesJudds Hill Cabernet is a sexy, elegant wine. The first impression is all about the fruit; lush and ripe and round. The tannins are soft and integrated but well-structured, allowing Judds Hill Cabernet to age 10-15 years yet are eminently drinkable upon release. Judds Hill Cabernet will complement steaks, spicy poultry dishes, cheddar or blue cheese, barbequed ribs and other red meats. Also, weve found this Cabernet Sauvignon to go especially well with Italian-influenced dishes.
The 2001 vintage has turned out to be spectacular. The Judd’s Hill 2001 Cabernet is an enormously rich wine with the complex aromas of black cherries and spice which follow through on the palate. A touch of French oak coupled with a bit of smoke add additional complexity to an already super complex wine, made so by the careful selection of disparate vineyards. Like all our Cabernets, the medium tannins and up front fruitiness provide a wine which is ready to drink upon release. That’s not to say that a few more years of aging won’t add a bit of finesse. We believe the structure is there to drink over the next decade.
Blended with small amounts of Merlot and Cabernet Franc, this wine is deep, dark garnet in color with subtle aromas of violets, blueberries, smoke and black tea. On the palate, the wine delivers dense, wild blackberries, blueberries and currant fruit that is nicely integrated with cigar box, cedar, earth and chocolate notes. A supple, juicy wine ready to drink now and that will benefit from additional bottle aging. Our Estate Cabernet pairs nicely with a whole range of foods from roast beef to duck to Turkey. It is also a favorite match with a broad selection of strong flavored cheeses.

Lovely stuff. It starts out smooth but tight, almost reticent, and then it just explodes with dark cherry, plum and black currant. The tannins virtually announce its cellar potential. Elegant, correctly balanced, ample grip and weighty enough. This... Wine Enthusiast. A Cabernet Sauvignon wine from California in USA. 1997 Judd's Hill Cabernet Sauvignon 750ml
