Jean-Claude Boisset has undergone a radical transformation since the arrival of viniculteur Gregory Patriat in 2002. J-C Boisset previously bought wine from growers, but Gregory changed the focus of the company by purchasing grapes rather than juice. This allows Gregory to work with growers to get lower yields and higher canopies in order to ensure greater ripeness. His contracts specify payment by the hectare rather than by yield, and he prefers to work with organic growers as he finds they produce better fruit. Once the grapes are picked, he can ensure the result is not only a clean and balanced wine, but also one that is beautifully expressive of the appellation. The wine has a deep and sparkling colour and a nose of subtle aromas of perfectly ripe fruits, against an elegant woody vanilla background. The palate is a mixture of blackcurrant and spices, with great length. This wine can be enjoyed after two or three years, but will take around ten years to reach its full potential. An ideal food match would be with a venison-type game meal and high-quality cheeses. Lastly, it must be noted that since the wine is only lightly filtered, it has to be stored at a temperature of 12-14°C (54-57°F).
