Jean-Claude Boisset les Ursulines Bourgogne Chardonnay 2013

In 1961, a tenacious eighteen-year-old, Jean-Claude Boisset founded his eponymous négociant winery in Nuits-St.-Georges. An artisan Burgundy producer with an audacious, contemporary style, the winery is housed in a former Ursulines convent where Winemaker Grégory Patriat strives for authentic wines in which human intervention has been kept to a bare, discreet minimum. Utilizing native yeasts and never more than 30% new oak, the wines are concentrated, well-rounded, and naturally expressive of their terroirs. The winery embraces the philosophy devised by the Boisset family where the winemaker is as much engaged in the vineyards as in the cellars, building close partnerships with growers to achieve the highest quality in the vineyards. This wine was made with Chardonnay grapes from the Côte de Beaune (50%) for richness and from vineyards a little further south (the Mâconnais region) for minerality and freshness. Careful work in the vineyard and strict monitoring concerning yields, were followed in the production of this wine. Strict attention was paid to growing methods, such as working of the soil to improve and maintain soil life which is necessary for the full expression of the terroir.The grapes were handpicked and whole bunches were gently pressed for 2½ hours. The temperature of the must was brought down and then was immediately transferred to barrels with no settling to preserve a maximum of lees. A long barrel fermentation (up to 10 months!) using indigenous yeasts followed. The wine aged for 12 months with no racking or stirring to bring out all of this wine’s minerality and only 10% new oak barrels were used for very delicate oaking. The wine was gently fined before bottling. It shows bright acidty, rich texture and a myriad of flavors from Mandarin orange to golden apple to Bartlett Pear along with stony minerality.
