Straw in colour, with a delicate floral, piney nose, this is acidic, resinous, rustic and slightly austere. Zippy, spicy acidity makes it an excellent food wine; the white-flower flavours are elegant but were resilient enough to partner wild mushroom and gruyere agnolotti with sorrel. Another couple of years might soften the haughtiness.
