HARVEST: Beginning in the latter part of January, the conditions were such that the quality of the grapes picked was excellent, providing wines with good acidity balance and great concentration. The Montague Vineyard yielded our Vidal grapes, with additional yields coming from the Lament and Atalick Vineyards in Niagaraon-the-Lake. The Cabernet Franc Icewine from this vintage displays exceptional color intensity and tannic content, quite unique in Icewine. Our Gewurztraminer grapes harvested from the Forrer Vineyard exhibited the ideal floral nose, with optimum balance and varietal characters. Overall, this was another example of an excellent vintage for Niagara Icewine production. WINEMAKING: Naturally frozen on the vine, the grapes for our Vidal Icewine were picked at an average temperature of -10˚C. The grapes were pressed immediately after picking in small lot basket presses, thus enhancing the varietal’s sweetness and concentrated aromatic flavours. This was followed by slow, cool fermentation using specially selected yeast in stainless steel tanks to preserve the wine’s intensity, and fruit character.
