Winemaker's Notes:

Harvest The grapes for the Jackson-Triggs 2007 Proprietors’ Reserve Merlot were harvested from October 19th to at 24.7º Brix from the Bear Cub, McIntyre and Bull Pine vineyards. Winemaking Our 2007 Proprietors' Reserve Merlot was aged in both French and American oak barrels, and underwent malolactic fermentation to impart rich complexity and structure. Winemaker's Notes This wine displays fresh plum and black cherry aromas, with a hint of chocolate. The fruit flavours are sustained by velvet tannins and an elegant lingering finish. - Brooke Blair, Winemaker Food Pairings The elegant lingering finish of this wine perfectly complements grilled steak, pasta in rich tomato sauce, Beef Wellington, veal in a red wine reduction and medium aged cheddar.
