Winemaker's Notes:

The fruit from this vineyard is picked at night while temperatures are cool, ensuring the best possible conditions for processing. The fruit arrives at the winery early in the morning, where it is hand-sorted before being gently destemmed and placed in open-top fermenters. Soaking from five to ten days at cold temperatures before fermentation allows gentle extraction of color and tannins. A variety of custom yeasts were selected for their different flavor-inducing components. Fermentations are monitored carefully with each tank, and samples are tasted daily in order to pick the perfect moment for draining the juice into barrels. The juice is allowed to run freely from the tank to 100% French oak barrels, where it undergoes malolactic fermentation at its own pace. This process allows the wine to achieve its full body.
