Cabenet Sauvignon: Originally of French origins, this versatile grape produces exceptional wines around the globe. It's usually medium to full bodied with a fine structure that supports black and red fruit flavors with typical notes of olive, chili and herbs that add complexity.

Winemakers Notes

VINTAGE The characteristic constant sunshine, very warm days and cool nights produced grapes with intense color and flavor, facilitating the 2002 harvest with ease. The 2002 harvest, like most harvests in Paso Robles, was a waiting game for the fruit to achieve full color and flavor potential while sugar ripeness gradually increased. This varied from vineyard to vineyard with harvest lasting 3 weeks, beginning on September 30th. Sugar levels in 2002 ranged from 25 to 27 º Brix. Reviews

Moderately dark ruby red in color, the Seven Oaks Cabernet Sauvignon has aromas of cherry, blueberry with a hint of orange rind and violet. The bouquet is a dark complex of tar, tobacco, cedar and chocolate oak. Showing ripe and velvety soft tannins supported by good acidity, this wine is delicious now with grilled or roasted red meats and red-sauced pasta dishes and will develop additional complexity with bottle aging.
