- The 1997 Hilltop Cabernet Sauvignon marks the third vintage from this special place and its truly an outstanding vintage. The concentrated aromas of blueberry, cassism and black cherry are complexed by twenty-four months of aging in 100% new thin stave French oak barrels. This extended oak aging not only concentrated the fruit aromas, but contributed a tary roasted oak, vanilla and tobacco bouquet. Showing mature fruit and fullness with ample but sweet well integrated tannins the 1997 Hilltop Cabernet Sauvignon has the finesse and structure of the finest appellations of Cabernet. Alcohol: 13.7% by volume.
