J Cuvée Xb NV
All grapes at J are hand-harvested into small quarter-ton bins and placed as whole clusters, without destemming, into our special Coquard press for a gentle pressing cycle. Grape juice from the various vineyard lots is fermented and kept separately until blending decisions are made in mid-November. The cuvée (blend) was assembled and cold stabilized to remove excess tartrates and then bottled in the spring. The cuvée included 25% oak cask aged non-vintage wines that were carefully selected for this blend.

New offering Two to three years, 4gr Dusty, steely, firm nose shows hints of toast, chalk, dried pear and dried flowers. Wonderfully tense, and snappy in the mouth this offers up mineral driven flavors laced with hints of dried herbs, polleny flowers and gorgeous yeasty notes that support a core of dried apple and pear fruit. gentle and delicate in the mouth with a finish that is clear and tense with dry white fruit and a little lemon curd accent. As much as I love real French Champagne, the price is often prohibitive for my budget, so that's why I was so excited to discover the J Cuvée 20! For half the price, this California bubbly from renowned Sonoma producer Jordan maintains the same level of depth and complexity, though the style is a bit crisper and less yeasty. I'm in love with the bright citrus fruit notes that show along with the classic pear and red apple notes, while the slight toastiness delivers a smooth, dry finish.

Notes: After the secondary fermentation occurred in the bottle, the wines aged for more than three years in our cool cellar. The wines were carefully riddled to remove the yeast sediment responsible for the aging character. Following disgorging, a dosage liqueur of reserve wine and pure cane sugar was added to balance the wine. An additional six months of aging on the cork before release ensured a perfect balance of flavors.
