Hourglass is at the premium end of California Cabernet, and at about 175.00 it's worth every cent. This is truly an almost perfect wine, you have to drink it to understand what power and elegance in wine really means. Hourglass should be kept in everyone's cellar, whether it be a walk-in cellar, a floor unit, a closet or under your bed... it is a treasure.

Weirdest thing I have smelt on a red wine - BBQ potato chips! A mid-palate of red raspberries, plums skins and licorice; tannins disappear a bit. A wine with a strong start and a mild finish. Easy drinking.

Hourglassandrsquo;s flagship wine, the 2007 Cabernet Sauvignon is one of their strongest efforts to date. An inky/purple color is followed by subtle scents of barbecue smoke, black currants, black cherries, licorice, and a hint of oak. Full-bodied, generously endowed, and deep with loads of concentration, purity, and texture, it is approachable now, but should evolve for 20andndash;25 years.

More tannic and closed was the 2006 Cabernet Sauvignon Blue Line. This wine has outstanding ripeness, as most wines do in this vintage, but the tannins are elevated, the wine muscular, firm, and needing some time in bottle. This wine needs 2-3 years of bottle age and should last for 15 or more years.

Dark red-ruby. Complex nose offers plum syrup, smoke, mocha and chocolate. Fat and sweet, but with good ripe acidity keeping the flavors of plum, redcurrant and tobacco fresh. Finishes long, with ripe tannins arriving late. Deceptively tasteable today, this wine should really be kept for a few years. These vines are planted in a rocky canyon on well-drained, cobbly soil.
