Winemaker's Notes:

Despite the cooler vintage, Cabernet Sauvignon in the Hourglass Estate Vineyard achieved optimal levels of phenolic and tannin ripeness, resulting in pure fruit extraction, supple textures, and exotic aromas. The hallmark aromatics of mint, camphor and black licorice are all present, as well as those of woody elements including cedar and sandalwood. Exhibiting the classically delineated structure of a cooler season, the wine features a tight-knit core of dark red and black fruit flavors evoking pomegranate, cassis, and a tangy acidity. The wine showcases grace and finesse, with ample richness, a compelling mouth feel and lingering finish. Tracking earlier vintages of this wine from similarly cool growing season leads us to expect even greater elegance, aromatics and flavors with additional cellaring. By 2018 to 2020, look for deepened layering with attractive tertiary compounds such as leather and tobacco.
