Hollick Cabernet Sauvignon Coonawarra 2008

Winemaker's Notes:

The Hollick winery, cellar door and restaurant complex is established on "Neilson's Block", one of the original John Riddoch Coonawarra selections in the cool South East corner of South Australia. With a vision of a great future for Coonawarra, Ian Hollick purchased 22 hectares of prime terra rossa land in 1974. Driven by quality and a hands-on approach, Hollick wines are made from three core vineyards. Neilson's Block, planted by Ian and Wendy in 1975, the nearby Wilgha vineyard, purchased in 1987 and the Red Ridge vineyard developed in 1998 at Wrattonbully, giving Hollick over 200 acres of vineyard in total.2007 saw Hollick celebrate their 25th Anniversary. Coonawarra soil is the classic Terra Rossa over limestone, providing excellent drainage and the right balance of nutrients, the ideal medium for vine growth and production of high quality fruit.The climate of Coonawarra is markedly influenced by proximity to the coast, creating morning cloud over, which has a profound effect on sunshine hours and hence, fruit development. This moderating effect provides optimum conditions for ripening - long and slow - allowing maximum flavour accumulation and development of fine tannins. This wine is made from a selection of the best Shiraz from the Red Ridge vineyard at Wrattonbully. The vineyard was was planted in 1998 and boasts similar shallow terra rossa soils over limestone to Coonawarra, but is marginally warmer resulting in earlier ripening. The wine is a classic Coonawarra Cabernet showing intense cassis fruit flavours, with a long finish on the palate and soft tannins. This Cabernet Sauvignon shows a dense and dark crimson colour with purple hues at the rim. A powerful bouquet of cassis, blackcurrants and violets with hints of mint, cedar and dried herbs. Flavours A rich and powerful wine with layers of concentrated blackberries, cassis, and plum flavours supported by hints of menthol and fine grained tannins. A focused and intense wine displaying balance, elegance and a long and persistent finish. Ideal with rosemary encrusted rack of lamb with chunky oven roasted vegetables .

Driven by quality and a hands-on approach, Hollick wines are made from three core vineyards. Eighty percent is planted to red varieties, including Cabernet Sauvignon, Merlot, Cabernet Franc, Shiraz, Pinot Noir, Sangiovese and Petit Verdot. The balance of the vineyards are planted to the white varieties of Chardonnay, Riesling, Sauvignon Blanc and Semillon. A historic cottage, which was restored by Ian and Wendy in 1983 is a feature of the entrance to the winery. Heritage listed and built in 1860, it was the birthplace of famous lyric poet John Shaw Neilson and was the original cellar door. Read less
