Hirsch Riesling Gaisberg 2007
This single vineyard Riesling comes from 40 year old vines that grow on the terraced slopes of the famous Zöbinger Gaisberg vineyard whose eroded primary rock soils offer ideal preconditions for Riesling. Due to their expressive fruit the minerally varietals from this site tend to charm quite early, though they also have a remarkable ageing potential. A wonderful companion for many dishes with white meat as well as stew, numerous vegetarian dishes and sea fish, but also an exciting match to aged hard cheeses. The Gaisberg is usually harvested in mid-October, whole cluster pressed and then exclusively fermented with natural yeasts without any kind of temperature control. It is matured in stainless steel tanks as well as large oak casks, resting on the fine lees through April; the wine is bottled in July following harvest.
This wine was supposed to be perfect for thanksgiving and turkey. Balanced, acidic, and crisp with blossoms and lemons. However, this wine was the flavor of concentrated ass! Both my wife and I took one sip, convulsed systemically and gave the bottle away. If you like an acidic, dry, tart wine, this is for you.
