Highland Park is a Scotland’s most northerly single malt whisky distillery, located on Orkney Island. It’s a lightly peated malt, characterized by rich, rounded flavors of heather, golden apples, vanilla and sweet tobacco smoke. After “unofficial” production by Magnus Eunson in the 1790s, Highland Distillers became an established brand in the early 19th century, founded by Robert Borwick and John Robertson. This is around the same time that King George IV gave Scotch royal approval and the Excise Act cut production taxes for commercial distilleries, making room for category expansion. However, Highland Distillers really came into its own in 1876 when it was bought by William Stuart and James Mackay. Not only did the malt begin to achieve class status, but blenders such as Chivas and Dewars were purchasing it to enrich their products. Demand steadily increased through the 1950s after a stoppage during World War II and various changings of hands. In 1970, Highland Distillers, bought Famous Grouse for which Highland contributes their malt. In 1979, Highland Distillers released their proprietary 12 year old single malt as Highland Park. This was an instant classic, perhaps only trumped by their 18 year, both of which consistently receive high accolades from whisky aficionados.
