Pale straw/green tint, it couldn’t be more pure; the ethereal nose is a slice of Sherry heaven — tart aromas of green apple, lemon peel, flor (yeast), and almonds enchant the sense of smell with delicacy and aplomb in all four nosing passes — a gem of a bouquet; on palate, the citrusy/doughy tartness greets the taste buds and immediately cleanses them — the goal of manzanilla, which is to stimulate and not overpower, is accomplished by this squeaky clean, refreshingly tart, and altogether subtle winner; I would have given a fourth star had there been more of a salty/briny tang; nevermind, just go out and buy it to have on hand as a superlative aperitif; as with all finos and manzanillas, be sure to consume it soon after buying; this winner ages over the span of seventeen criadera sequences.
