A blend of 90% Assyrtiko, 5% Aidani, and 5% Athiri which are Greek indigenous varietals. The color is pale yellow with a very austere nose of crushed stone, wet rock, ocean air, not very much fruit except citrus can be picked up. This wine is dry, full-bodied (the wine did rest sur lies), with tart acidity, with a long finish. The palate was flavorful with limestone, chalk, chamomile, citrus zest and much more minerality. This is a very complex wine that does not come across on the nose but on the palate the depth of flavors really come through. Still very young, another 5 to 10 years of cellaring should bring out even more complexity. 4.5/5

The Hatzidakis winery was founded in 1996 by Haridimos and Konstantia Hatzidakis on the island of Santorini, Greece. The winery resides in an original cave of Santorini that was abandoned several years ago during the earthquake in the 1950s. By 1997, the Hatzidakis transformed the cave into a small, artisanal winery and Santorini’s famous kouloura vines can be found just outside the cave. Within these vineyard plantings one can also find Santorini’s famous tomato plantings. Most of the vineyards, however, can be found on the outskirts of the village Pyrgos Kallistis at 150-300 meters facing north/northeast. The vineyard covering spans a total of 10 hectares throughout the island plantings. Hatzidakis has always and continues to follow organic vineyard practices as set by EU standards, but has not applied for classification. Currently, Hatizidakis has six wines in their portfolio, not all of which are available in the US. They include: Hatzidakis Santorini: 90% Assyrtiko, 5% Aidani, 5% Athiri Aidani Assyrtiko: 75% Assyrtiko, 25% Aidani Santorini Barrel: 100% Assyrtiko, aged in new oak barrels 10 months Nikteri: 100% Assyrtiko, macerated at lower temperatures Mavrotragano: 90% Mavrotragano, 10% Mandilaria Hatzidakis Vinsanto: 70% Assyrtiko, 30% Aidani Although small in production, Hatzidakis wines are respected throughout the world as a prime example of Santorini’s most famous grape, Assyrtiko.
